Abstract
За допомогою диференціального термографічного аналізу визначено форми зв’язку вологи та їх співвідношення в свіжих та сушених грибах. Отримані результати дозволяють керувати технологічним процесом переробки грибів, запобігаючи їх термічній деструкції.
The moisture forms and their correlation in the fresh and dried mushrooms have been determined by using differential thermographic analysis. The results allow to control the technological processing of mushrooms, preventing thermal degradation.
