Abstract
У дослідженні проаналізовано антиоксидантні властивості рідкісних та нетрадиційних видів рослинної сировини для використання у ресторанних технологіях. Отримані дані обґрунтовують використання цієї сировини у ресторанних технологіях для створення чайно-трав’яних композицій, соусів та компотів із підвищеною біологічною цінністю, покращеними органолептичними властивостями та зниженими витратами.
The study investigates the antioxidant properties of rare and unconventional vegetable plants for use in restaurant technology. The findings support the inclusion of these vegetable plants in restaurant applications, such as tea-herb compositions, sauces, and compotes, to enhance biological value, organoleptic properties, and product cost-efficiency.
