Abstract
В роботі розглянуто традиційні методи екстракції ефірних олій з пряної сировини. Проведена їх порівняльна оцінка, зазначено переваги та недоліки. Проаналізовано передові способи вилучення ефірниз олій. На основі аналізу літературних джерел зазначено перспекти використання СО2 екстракції та механізм даного процесу.
The work considers traditional methods of extracting essential oils from spicy raw materials. Their comparative assessment was carried out, advantages and disadvantages were indicated. Advanced methods of extracting essential oils are analyzed. Based on the analysis of literary sources, the prospects for the use of CO2 extraction and the mechanism of this process are indicated.
