Study of technological regimes of dairy production

Abstract

The task of study was to establish the main technological operations of the production of sour-milk products, namely: the conditions of heat treatment of milk and sour-milk mixture; choice of type and amount of structure stabilizer. Завданням дослідження було встановити основні технологічні операції виробництва кисломолочної продукції, а саме: умови теплової обробки молока та кисломолочної суміші; вибір типу та кількості стабілізатора структури.
