Abstract

Даний спосіб може бути використаний для перероблення зернових – пшениці, тритикале, голозерного вівса та інших культур на пластівці з підвищеною харчовою та біологічною цінністю. Основними етапами технологічного процесу є: підготовка зерна до перероблення (очищення від домішок, сортування, провіювання, відділення феромагнітних домішок); миття та дезінфекція; лущення; гідротермічне оброблення – інтенсивне зволоження зерна та наступне відволожування (ГТО); плющення; підсушування пластівців; провіювання, фасування. Для підвищення біологічної цінності сировини, після першого інтенсивного зволоження передбачено інфрачервоне опромінення зернової маси
This method can be used for processing cereals – wheat, triticale, bare-grain oats and other crops into flakes with increased nutritional and biological value. The main stages of the technological process are: preparation of grain for processing (cleaning from impurities, sorting, winnowing, separation of ferromagnetic impurities); washing and disinfection; husking; hydrothermal treatment – ​​intensive moistening of grain and subsequent dehumidification (GTO); flattening; drying of flakes; winnowing, packaging. To increase the biological value of raw materials, after the first intensive moistening, infrared irradiation of the grain mass is provided
