Abstract

Invert sugar syrup is becoming an alternative source of sweet substances. Starch is produced from corn, wheat or barley, which, as a result of enzymatic hydrolysis, is converted into glucose, and then, as a result of isomerization, into invert sugar syrup. The purpose of the work is to intensify the process of obtaining invert sugar syrup from sucrose by using the treatment of a water-sugar solution in a rotarypulsation apparatus. Intensification of the process of obtaining invert sugar syrup can be achieved by including a rotary-pulsation apparatus in the corresponding technological scheme.
