Abstract

У монографії наведено аналіз сучасного асортименту морозива. Узагальнено основні закономірності формування і стабілізації дисперсних систем морозива. Викладено науково обґрунтовані рекомендації щодо управління цими процесами у виробничих умовах. Доведено можливість використання у складі морозива натуральних функціонально-технологічних компонентів з метою часткової та повної заміни цукру, стабілізаторів та інших харових добавок. Систематизовано основні види сучасного обладнання для виробництва морозива та обґрунтовано його вибір для практичної реалізації інноваційних розробок.The monograph contains an analysis of the modern assortment of ice cream. The main regularities of formation and stabilization of disperse ice cream systems are generalized. The scientifically substantiated recommendations concerning management of these processes in production conditions are presented. The possibility of using in the ice cream of natural functional and technological components for the purpose of partial and complete replacement of sugar, stabilizers and other food additives is proved. The main types of modern ice cream production equipment are systematized and its choice for practical realization of innovative developments is substantiated.
