Abstract
Визначено хімічний склад пшеничних зародків. Розроблено спосіб і режими їх сушіння опроміненням хвилями мм- та ІЧ- діапазонів. Визначено вплив обробки на харчову цінність та санітарну якість.
The chemical composition of wheat germ has been defined. Methods and modes of wheat germ drying with the help of radiation of mm-waves and infrared ranges have been developed. The influence of processing on the nutritional value and sanitary quality has been defined.
