Abstract
В роботі використано аналіз наукової літератури направленої на дослідження делестажу в технології червоних вин. Також проведений аналіз виробництва вина французької компанії, яка використовує дану операцію на свому підприємстві.
The work uses an analysis of the scientific literature directed to the study of delage in the technology of red wines. An analysis of the wine production of the French company, which uses this operation at its enterprise, was also carried out.
