Abstract
В роботі наведено технологію виробництва желейного десерту на основі вишнево-бурякового пюре-напівфабрикату та вплив даного напівфабрикату на якість готової страви. The technology of jelly dessert production on the basis of cherry-beet puree-semi-finished product and the influence of this semi-finished product on the quality of the finished dish are presented in the work.
