    Modelling of thermoradiative-convective drying process of products of plant origin

    Modeling of thermoradiative-convective drying of cultivated mushrooms was carried out when the moisture content decreased from 809 to 30% within 80 minutes, and for hawthorn, the moisture content decreased from 330 to 38% in 60 minutes. The drying time of apple snacks is 70 minutes and increases by 10 minutes compared to apples, which is due to the sugar content in the snacks and the osmotic properties of sugar to retain moisture. According to the developed mathematical model of the drying process, the diffusion capacity of moisture was calculated, which is the largest among the studied products for cultivated mushrooms and is 9.58 × 10−4 m2/s, due to the lowest density of 750 kg/m3 and the highest porosity of the mushroom, which leads to deeper penetration of infrared radiation with a thermal diffusion coefficient of 1,011•10-3 1/K. The moisture diffusion coefficient for hawthorn is 6,8•10-7 m2/s, with a density of 1173,4 kg/m3 and a thermal diffusion coefficient of 0,51•10-2 1/K, due to the fact that the hawthorn fruits are spherical and were placed in the dryer in a heap. Apples and apple snacks when placed in the dryer were cut into slices of 4...6 mm, for which the moisture diffusion coefficient for apples is 8,48•10-5 m2/s, with the density of apples 880 kg/m3 and the thermal diffusion coefficient 3,096•10-5 1/K. Apple snacks were made by blanching apple cores in sugar syrup before drying, which led to a decrease in the moisture diffusion coefficient to 8,28•10-6 m2/s, an increase in density to 965 kg/m3, and a thermal diffusion coefficient of 4,06•10-2 1/K compared to apple slices.Modeling the interaction of convective and thermoradiative energy supply in pulse mode allows to ensure the maximum technological effect.

    Determining the mechanism for generating cavitation pressure fluctuations in throttle devices at high-head throttling of liquid

    The object of this study is the process of generating cavitation pressure fluctuations behind the throttle device at high-head throttling of liquid. This paper addressed the problem of calculating the amplitude of cavitation pressure fluctuations at high-pressure liquid throttling. It was established that cavitation pressure fluctuations are a consequence of collisions of discrete masses of a transiting liquid jet in the region of pressure recovery. The range of cavitation pressure fluctuations reaches the pressure values at the inlet to the throttle device. The frequency band of cavitation pressure fluctuations is in the range from 1.5 to 20 kHz and higher. At high-head throttling of the liquid, caverns attached to the surface of the throttle channel, moving caverns and small bubbles in the transit flow are formed. Moving caverns compress the transit flow and divide it into separate fluid blocks. In the region of pressure restoration, the moving caverns are slammed shut and discrete fluid blocks collide. This causes high-frequency pressure fluctuations. Special feature of the results is the possibility of estimating the range of cavitation pressure fluctuations depending on the pressure drop on the throttle device. When the back pressure on the throttle device increases, the amplitude of cavitation pressure fluctuations decreases, and the frequency band shifts to the high-frequency region. The results make it possible to calculate the range of cavitation oscillations, to predict the development of cavitation erosion of materials depending on the parameters of throttling of the working fluid. The results of the work are used to design devices for cleaning products from contamination, for determining the volume content of water in aviation fuel, for intensification of technological processes in the chemical and food industries.

    Application of radiation-convective drying method to remove water from gels

    В статті наведені результати досліджень по застосуванню інфрачервоного випромінювання в процесі сушіння фруктового мармеладу на основі різних цукрів: сахарози, глюкози, фруктози. Встановлено, що при додатковому застосуванні інфрачервоного випромінювання разом з традиційним конвекційним сушінням тривалість технологічної стадії сушіння може бути скорочений на 4-5 год.The article presents the results of research on the application of infrared radiation in the process of drying fruit marmalade based on various sugars: sucrose, glucose, fructose. It was established that with the additional use of infrared radiation together with traditional convection drying, the duration of the technological stage of drying can be reduced by 4-5 hours.

    Research of methods and modes of drying of gluten-free pasta

    Application of thermo-radial-convective drying in the first drying period, and in the second period - convective drying promotes the obtaining of wheat and corn pasta of the best quality. The strength of wheat products is 3.7 N, and the rate of transition of dry substances to the cooking water - 10.7% to DM. The strength of gluten-free corn products is 3.5 N, dry matter transition - 13.9% to DM. This method also contributes to a reduction of energy consumption for the drying of wheat pasta by 1.1 times compared to the convective method for corn pasta by 1.35 times and is, respectively, 2.28 and 1.72 kW / kg of raw products. It is proved that the use of thethermo-radial-convective method in the first period of drying of gluten-free pasta, and in the second period of the convective method allows to reduce energy consumption by 1.5 times and to ensure good quality of products.

    Investigation of drying apple snack convection-termoradiatsiynym energy to wrap different power heaters

    During drying apple snacks to obtain high-quality product should choose optimum parameters of drying and rational use of energy, materials and time. The intensity of the thermal radiation-convection drying largely depends on the capacity of heaters, used for the process. The purpose of the given research is to determine the optimal load heaters. Під час сушіння яблучних снеків для отримання високоякісного продукту слід вибирати оптимальні параметри сушіння та раціональне використання енергії, матеріалів і часу. Інтенсивність сушіння теплового випромінювання-конвекції багато в чому залежить від потужності нагрівачів, що використовуються для процесу. Метою даного дослідження є визначення оптимального навантажувального нагрівача.

    Investigation of the forms of moisture bonding in cultivated fungi by the method of differential thermal analysis

    The paper is devoted to the investigation of the character of moisture bonding with the determination of areas on which substances transform in the process of drying of cultivated oyster fungi. The forms of the state of water in fungi have been investigated by the method of differential thermal analysis. The periods of fungi dehydration and transformation of dry substances under thermal influence on cultivated fungi have been established. The obtained scientific results can be useful and are employed in technologies of food fungi products. Робота присвячена дослідженню характеру зв'язування вологи з визначенням ділянок, на яких речовини перетворюються в процесі сушіння культивованих устричних грибів. Форми стану води в грибах досліджені методом диференціального термічного аналізу. Встановлені періоди дегідратації грибків та перетворення сухих речовин під впливом теплового впливу на культивовані гриби.

    The use of convective-thermoradiactive method of energy supply in the apple snack technology

    The effect of preliminary preparation of apples and the method of drying on qualitative indices during the production of apple snakes was investigated. It has been established that in order to improve the organoleptic characteristics of apple snails, it is advisable to pre-prepare apples in sugar syrup with a sugar concentration of 40%. In order to intensify the drying process, improve the quality of the finished product and reduce energy consumption, a combined convective thermo-radiation method of power delivery.

    The drying leurotus mushrooms by different types of energy

    The most effective method of food preservation today is dry . However , this method is also the most expensive. Therefore, the main objective of the drying process is to achieve the highest quality at a minimum cost of electricity. For dehydrated cultivated mushrooms from the energy point of view, the most appropriate drying by infrared radiation , but this method has not acquired a significant spread through thermal diffusion phenomenon. The paper studies the drying of mushrooms by three methods: convection, infrared light and a combination of these methods.

    The study of features of control of technological process for receiving the apple snacks

The article is devoted to the use of modern methods of the study of vegetable raw material for apple snacks production. To establish the optimal variety of apples there was used the analysis of technological parameters that depend on their chemical composition, especially on the quantity of dry substances, sugar-acid index and food fibers content. The study of inactivation degree of oxidative enzymes and possibility to prevent the protopectin hydrolysis process allowed establish the effectiveness of preliminary preparation of apples. research-industrial drying setting, constructed by the authors, gave a possibility to study the different drying processes at the expanse of combination of convective and thermoradiative ways of energy supply and to establish the optimal regime of apple snacks drying. Стаття присвячена дослідженню використання сучасних методів досліджень рослинної сировини для виробництва яблучних снеків. Для встановлення оптимального сорту яблук використовували аналіз технологічних показників, які залежать від їх хімічного складу, зокрема кількості сухих речовин, цукро-кислотного індексу та вмісту харчових волокон. Дослідження ступеню інактивації окислювальних ферментів й можливості перешкоджання процесу гідролізу протопектину дозволила встановити ефективність попередньої підготовки яблук. Сконструйована авторами дослідно-промислова сушильна установка, дала можливість провести дослідження різних процесів сушіння за рахунок комбінування конвективного та терморадіаційного способу енергопідведення та встановити оптимальний режим сушіння яблучних снеків.
