Abstract

The number of people suffering from celiac disease during last 50 years increased by ten times. That is why one of the main requirements to the food production is development of functional and special foods. It is important to study the alternative raw materials which can substitute sugar for people suffering from diabetes and celiac disease. Число людей, які страждають на целіакію за останні 50 років збільшилось в десять разів. Саме тому одним з основних вимог до виробництва продуктів харчування є розвиток функціональних і спеціальних продуктів. Є важливим вивчення альтернативних видів сировини, що може замінити цукор для людей, які страждають від діабету і целіакії.
