The research results showed that the active acidity of the curd mass directly depends on the quality indicators of the protein-berry clots, namely, the pH value of the berry coagulant and the amount of its introduction. Methods for investigating the ability of food fibers to moisture and fat absorption are proposed. The values characterizing the swelling parameters of the herbal ingredients in the experimental mixtures were obtained. The effectiveness of the IR spectroscopy method for the identification and comparison of moisture bond forms in mixtures of food fibers with water and oil was confirmed. The parameters of thermal stability and degree of leakage of liquid fat for mixtures of modified fat composition with maximum butter oil replacement by 25% of oil were obtained. The results of the studies indicate that there are objective possibilities for the effective use of Vicetal dietary fiber, to stabilize the structure and to prevent the appearance of defects in the consistency of products with modified fat composition.Документ Determination of amino acid composition and biological value in protein-berry concentrates(2019) Grek, Olena; Pshenychna, Tetyana; Onopriichuk, Olena; Tymchuk, AllaResearch of the amino acid composition of proteins, including the content of free and fixed amino acids, and biological value in protein-berry concentrates, obtained by thermo acid coagulation are an actual direction. Proteins in concentrates have a full amino acid composition and contain all essential amino acids, the content of which from amounts are 41.97% and 43.96%, respectively, for protein-berry and milk-protein concentrates. The total content of amino acids in protein-berry concentrates increased by 20.18% compared to the control sample - through the active coagulating effect of organic acids blackcurrant paste. Актуальним є дослідження амінокислотного складу білків, у тому числі вмісту вільних і зв’язаних амінокислот та біологічної цінності в білково-ягідних згустках, отриманих термокислотним способом осадження. Встановлено, що білки згустків мають повноцінний амінокислотний склад і містять всі незамінні амінокислоти, вміст яких від загальної суми становить для білково-ягідних та молочно-білкових – 41,97 % та 43,96 % відповідно. Загальний вміст амінокислот в білково-ягідних згустках збільшився на 20,18 % порівняно з контролем – за рахунок активної коагулюючої дії органічних кислот чорносмородинової пасти.Документ Determination of biologically active substances in protein-berry concentrates(2018) Grek, Olena; Onopriichuk, Olena; Pshenychna, Tetyana; Tymchuk, AllaДосліджено поліфенольний склад і проаналізовано порівняно з контролем (пастою чорносмородиновою) та визначено ступінь переходу в концентрати білково-ягідні, що складає близько 55,31 % поліфенольних сполук, в тому числі антоціанів. Білки концентратів мають повноцінний амінокислотний склад і містять всі незамінні амінокислоти, вміст яких від загальної суми становить для білково-ягідних та молочно-білкових – 41,97 % та 43,96 % відповідно. В концентратах ідентифіковано 18 вільних та 16 зв’язаних амінокислот, із яких переважають глютамінова кислота, гістидин, метіонін, лейцин та пролін. Визначено замінні амінокислоти, вміст яких від суми загальних амінокислот в КБЯ та КМБ (контроль) становить 58,03 % та 56,04 %. Збільшується вміст НАК в концентратах білково-ягідних на 14,75 % та ЗАК на 24,45 % за наступними амінокислотами: треонін на 0,156 мг%, лізин на 0,21 мг%, триптофан на 0,221 мг%, фенілаланін – 0,525 мг% порівняно з контрольним зразком. The research results of polyphenol composition were analyzed compared with the control (blackcurrant paste) and the degree of their transition to protein-berry concentrates was determined, which is about 55.31 % of polyphenols, including anthocyanins. Proteins in concentrates have a full amino acid composition and contain all essential amino acids, the content of which from amount is 41.97 % and 43.96 %, respectively, for protein-berry and milk-protein. A quantitative content of 18 free amino acids and 16 bound amino acids has determined in protein-berry and milk-protein concentrates, of which glutamic acid, histidine, methionine, leucine and proline are dominated. The nonessential amino acids were determined, the content of which is 58.03 % and 56.04 % from the sum of total amino acids in the PBC and MPC (control). The content of essential amino acids in protein-berry concentrate has increased by 14.75 % and the nonessential amino acids by 24.45 % by the following amino acids: threonine at 0.156 mg%, lysine at 0.21 mg%, tryptophan at 0.221 mg%, phenylalanine at 0.525 mg% compared with the control sample.Документ Determination of moisture connection forms of protein-herbal clots(2017) Grek, Olena; Onopriichuk, Olena; Tymchuk, Alla; Chubenko, LarysaThe interest is research by the moisture bonding forms in the modified milk-protein concentrates, especially, in protein-herbal clots which are obtained by thermo acid coagulation of milk proteins. The expediency and the use of these products is proved for producing of emulsive type dairy fat products of vegetable origin with dietary fiber as “Citri-Fi”.Materials and Methods. With the method of gas-liquid chromotography peak samples products of sweetbrier processing are identified. Found that received dairy fat products of vegetable origin of emulsive type contain more unsatured fatty acids than butter, which is included to the recipe of spreads. Results. Found that in the investigated spread the amount of saturated and unsaturated fatty acids are reduced (capric (by 1,136 %), lauric (at 1.958 %), myristic (by 3.03 %), palmitic (at 6.454 %), stearic (at 1,016 %), arachidonic (by 0,229 %) also the amount of trans-isomers that during the consuming of the product can cause cardiovascular disease (by 1,305 % compared with butter). The main ω-3 fatty acid in dairy fat products of vegetable origin with dietary fiber is linolenic, compared with butter its content increases by 0,038 %. Among the ω- 6 acids in samples linoleic dominates which increases by 0,458 %, linoleic cis-9, cis-12 C18: 2 – 15,282 %. From monounsaturated fatty acids in the spread of PSP the lower amount of such fatty acids as: mirystooleinic, palmooleinic, heptadecenoic, elaidonic but more oleic (by 1,831 %). The APF consists of extruded wheat mill run (60 %) and apple powder (40 %). Dietary fiber concentrates with polyfunctional properties were used to createalbumin-vegetable mixtures (AVM). The efficient use of resources and combined nutritive elements was takeninto consideration. The optimal quantity of apple pectin fiber in albumin mass constitutes 4 to 6 %. This quantity was determined organoleptically. The received samples had a homogenous, plastic consistency withAPF fractions. The taste and smell were characteristic of albumin mass with a slight flavor of apple pectinfiber. Practical application of the obtained mathematical models is forecasting changes of the indices ofalbumin-vegetable mixtures with time. The study findings can be used for the manufacture of combined foodsfrom vegetable components and by-products obtained during milk processing. According to the obtained data, it was established, that yeast cells actively developed in the period from 4 to 16 fermentation hour at the ratio of malt and whey in the restored mixture as 1:1,5 and 1:2. The increment of cells with glycogen in mixtures with the ratio – malt:whey as 1,5:1 and 2:1 was intensive.
